Nom.. Nom.. Nom.. Cookies!

So, as most know over this weekend the East Coast got a good dose of hurricane..  Lots of areas close to the beaches were evacuated, most of us were told not to leave our homes, &now more than enough are dealing with flooding.

While all of this fun wind and rain are happening outside, what else am I supposed to occupy myself with besides baking?? (&Of course, cuddling with my man. =] )
I wanted something warm, something comforting so we could just snuggle up some more &munch on &something I haven't baked in a while... Cookies!!!  So searching for a good recipe, I went.



Triple Chip Cookies [courtesy of Bakerella]

1 1/3 cup all purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1/3 cup sugar
1/2 cup brown sugar
1 teaspoons vanilla
1 eggs
3/4 cups milk chocolate chips
3/4 cups peanut butter chips (She had used butterscotch, but I like PB =])
3/4 cups white chips

Preheat oven 350 degrees. In large bowl; mix flour, baking soda, and salt &set aside.  Using a mixer, mix butter and both sugars until light and fluffy.  Add eggs and vanilla and mix until combined.  Add flour in two additions, scraping doin the sides in between. Mix until combined.  Mix chips together in large bowl and stir into the cookie batter.  Cover a large baking sheet with parchment paper &using a cookie scoop place the cookies on the sheet.  You should get about 3 dozen cookies.  Bake for ten minutes, for soft cookies &12+ for a little bit harder of a cookie.

My family loooved these cookies, they will definitely become a staple cookie recipe that I keep around for holidays and just because.  They stayed soft up to two days after I originally baked them.. (That being tested from the three cookies that I had left. Hehe.)  &You can definitely mix and match the chips that you use, or even different nuts.  This recipe is just too easy, there's no excuse not to try it.
