Three Times the Cupcake

Finally after two, maybe almost three weeks I have a post for you!  &It is JAM PACKED with recipes &goodness.

I'm pretty excited to share these recipes, because this is the first post coming from my new apartment &my new kitchen;  So please enjoy.

First off, it's the beginning of fall.  One of my top seasons to bake in;  The aromas are amazing and definitely incorporated into this post today.  I went cupcake crazy today &it felt so good;  It's been way too long since I've experimented with different cupcake flavors, buttercreams, and garnishes.  Here we go...

"Fall Harvest" Pumpkin cupcake w/Cinnamon Cream Cheese Frosting

Peanut Butter SURPRISE

They look delicious, right?!  Well, they are!  Here are the recipes (all baked at 350 degrees), so you can enjoy them yourself and share with family and friends... Or just yourself.  It's understandable, trust me. ;)

"Fall Harvest" Pumpkin (courtesy of Paula Deen)

4 Eggs
1 2/3 cups Sugar
1 cup Oil
15oz (1 small can) Pumpkin
2 cups Flour
2 tsp. Baking Powder
2 tsp. Cinnamon
1 tsp Salt
1 tsp Baking Soda
 -Combine eggs, sugar, oil, and pumpkin until fluffy.  Mix together dry ingredients.  Then add the dry ingredient mix to the wet at a low speed until combined and smooth.  20 minutes.

Cinnamon Cream Cheese Frosting
8oz (1 pkg) Cream Cheese
1 stick Butter (soft)
2 Cups 10X Sugar
1-1/2 tsp Cinnamon
1 tsp Vanilla
-Combine Cream Cheese and butter;  Add sugar and cinnamon slowly; Finish with vanilla extract.

Caramel Apple
2 sticks Butter (soft)
1 cup Sugar
2 cups Flour
1 tsp Baking Powder
1 tsp Cinnamon
4 Eggs
1 tsp Vanilla Extract
2 Granny Smith Apples; Diced
-Combine butter and sugar; Add eggs one at a time, then vanilla.  Combine dry ingredients and add to the wet mixture.  Fold in apples.  20 minutes.

Caramel Buttercream
1 cup Butter (soft)
3 cups 10X Sugar
1 tsp Vanilla
1 tsp Milk

Peanut Butter SURPRISE
6 TB Butter (soft)
1 cup Peanut Butter
1 1/3 cups Brown Sugar
3 Eggs
1 TB Vanilla
3 cups Flour
1 TB Baking Powder
1 tsp Salt
1 -1 1/2 cups Milk (Depending on the batter, use more to thin it a little.)
Mini peanut butter cups (unwrapped)
-Combine butter, peanut butter, brown sugar until smooth.  Add eggs one at a time.  Add dry ingredients; Then add milk with vanilla.  Once scooped into muffin tin, take a mini peanut butter cup and push it in the center down until it's leave with the top of the batter. 20 minutes.

Chocolate Buttercream
6 TB Butter (soft)
2 tsp Vanilla
3 cups 10X Sugar
3/4 cups Cocoa Powder
1/3 cup Milk
-Combine butter and vanilla; Sift together sugar and cocoa, add slowly.  Add milk, use more to thin (if needed).

All three recipes; Plus a Pumpkin with Caramel Buttercream. Topped with walnuts.
I hope you find these recipes enjoyable; They are a great way to bring in the fall season, because it is only just the beginning.
