Chocolate Chip Banana Bread

Long time no post!..

I would love to get this page up and running, so from now on I'm trying my hardest to make weekly posts of goodies. =]

The other night I was in a huge baking mood and just had to bake something before I fell asleep, so I decided on Chocolate Chip Banana bread..  There's just something about putting chocolate chips in banana bread that has made me love the bread SO much more!  &Making mini loaves just made me happier than a normal size loaf.


Chocolate Chip Banana Bread:

1 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract

1/2 cup unsalted butter, at room temperature
1 cup sugar
3 ripe bananas, peeled, and mashed with a fork (about 1 cup)
3/4 cups chocolate chips (you can do less, I like extra =D)

Preheat oven to 350 degrees.
In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually add the eggs and vanilla into the butter while mixing until incorporated. Add the bananas (the mixture may appear to be curdled, so don't worry), and remove the bowl from the mixer.

With a spatula, mix in the flour mixture until just incorporated. Fold in the chocolate chips (walnuts could easily replace the chocolate chips).
Bake for 55 minutes or until a toothpick inserted comes out clean.

For a finishing touch once the bread had cooled a little I dusted them with some 10X sugar.
