This past weekend was Peace O' Cake Cupcakes first selling event at Leesport Craft Fair. Unfortunately, due to rain conditions the crowd was so-so &the rain started to be steady that we had no choice but to pack it up. The craft fair was a great experience &it was great to be able to share our products with people outside of the Coatesville/Chester County area. Feedback was great &another craft fair at Leesport is definitely in Peace O' Cake Cupcakes future.</div>

So, on to new creations.. I am definitely getting into the spring flavors. Even though I LOVE fall and winter flavor combinations, I am SO ready for light, spring combinations. Give me a bag of chocolate covered pretzels &they will be gone in an instant. From using one of my favorite combinations I just had to make a cupcake. To be exact here is my Chocolate Salted Caramel Pretzel Cupcake. I know that could be a mouthful, maybe a shortened name will come about in the future; For right now, it's good enough for me. =)<br />

For this I used my basic go-to chocolate cupcake recipe. Prepared my own salted caramel, which went into the buttercream &was used as a filling for the cupcakes &can't forget about that drizzle! If you're not into making caramel the canned or bottle will do the trick, the only thing is that it won't be salted. <br />

On a side not, while on a hunt for gingerbread men sprinkles I stumbled upon stacked sprinkle containers, <b>GENIUS</b>! Maybe I have just been blind and haven't taken notice that these exist, but boy am I excited. They are perfect for space saving, which when it comes to sprinkles I need as much space as possible!<br />

Haha.), and on Christmas Eve we all come together under one roof and celebrate; It may get hot in one house, there may be A LOT of kids running around crazily, there may be how many of us talking over one another, but that one night I wouldn't change for anything.</div>

Let's see where we start. We have a vanilla cake, marbled with a brown sugar cinnamon filling. Topped with cream cheese icing and then drizzled with coffee icing.<br />

<u><i>Vanilla Cupcake</i></u>: {Recipe adapted from Bakingdom.com}<br />
1 ½ cups Flour<br />½ cup Sugar<br />1 ½ tsp Baking Powder<br />½ tsp Salt<br />1 Stick Butter [Room Temperature]<br />½ cup Sour Cream<br />2 Eggs<br />1 tsp Vanilla Extract<br />

½ Stick Butter {Melted}<br />1/3 Brown Sugar<br />1 tsp Cinnamon<br />

<i><u>Cream Cheese Icing</u></i>:<br />
4oz Cream Cheese<br />2 Tb Butter [Room Temperature]<br />2 cups 10x Sugar<br />½ tsp Vanilla Extract<br />1 Tb Milk<br />

<i><u>Coffee Icing</u></i>: <br />
2 Tb Butter [Room Temperature]<br />1 cup 10x Sugar<br />½ tsp Vanilla Extract<br />1 -2 Tb Coffee {Brewed}<br />
1/2 tsp Milk<br />

Oven is 350 degrees. This recipe will make 12 cupcakes.<br />
In a medium bowl sift together the flour, baking powder and salt; Set aside. In a large bowl cream the butter and sugar until light and fluffy. Add the eggs one at a time, combining after each addition. Add sour cream and vanilla and combine. Then in two additions add the flour mixture until just combined, make sure not to over mix.<br />
For the filling, using a small bowl melt the butter add the brown sugar and cinnamon, then stir until smooth.<br />
To begin filling the cupcake liners, using an icecream scoop place the cupcake batter into each cup. Then, making a well, for each cup use two teaspoons of the filling mixture. Using a toothpick swirl the filling with the cake batter.<br />
Bake 18 to 22 minutes.<br />

Onto the icings. YES <b>two</b> icings!!<br />
In a medium size bowl mix together the cream cheese and butter until smooth. Add the 10x sugar in two additions until combined. Finish off with the extract and the milk, until smooth.<br />
In a smaller bowl, mix together the butter, vanilla extract, milk, and one tablespoon of the coffee. Add the sugar and mix until smooth. I used this icing as a drizzle, so the second tablespoon will need to be added to make a rather runny consistency.<br />
<br />
Once cooled, spread on the cream cheese icing; Or you can pipe this, for this recipe I went old school and used a spatula. Finishing off with drizzling the coffee icing.<br />

{Side note; You don't need to use both icings. They taste great with either or, but if you want something on the next level definitely go with both icings. 1 (12 oz) Bottle Stout (I used Java Head, which is brewed with coffee)<br />

½ cup Vegetable Oil<br />

¾ cup Sour Cream<br />
¾ cup Cocoa Powder<br />
2 cups Sugar<br />
2 ½ cups Flour<br />
1 ½ tsp Baking Soda<br />

Combine stout, milk, oil, vanilla, and coffee. (Don‘t worry, it will look odd because of the oil) Beat in eggs one at a time. Add sour cream and combine. Mix together the cocoa powder, sugar, flour, and baking soda and gradually add the dry into the wet ingredients. (Don‘t be alarmed, the batter is very thin and you may think that the cupcakes will spill over in the oven. You‘ll be amazed.) 350 for 20 minutes<br />
<br />
<b>Ganache</b>:<br />
12 oz Semisweet Chocolate<br />
1 cup Heavy Cream<br />
1 tsp Vanilla<br />
½ tsp Butter<br />

For the ganache; Heat up the heavy cream and over pour onto the chocolate, begin whisking from the outside in. When the ganache has cooled add the Vanilla. Dip the cupcakes into the ganache and sprinkle with crushed pretzels or place a whole one on top.. You can also add a little sea salt to get more of the chocolate and salt taste.<br />

These cupcakes came out wonderfully. <b>"Fall Harvest" Pumpkin </b>(courtesy of Paula Deen)<b><br /></b><br />
4 Eggs<br />
1 2/3 cups Sugar<br />
1 cup Oil<br />
15oz (1 small can) Pumpkin<br />
2 cups Flour<br />
2 tsp. Baking Powder<br />
2 tsp. Cinnamon<br />
1 tsp Salt<br />
1 tsp Baking Soda<br />
-Combine eggs, sugar, oil, and pumpkin until fluffy. Mix together dry ingredients. Then add the dry ingredient mix to the wet at a low speed until combined and smooth. 20 minutes.<br />

<b>Cinnamon Cream Cheese Frosting</b><br />
8oz (1 pkg) Cream Cheese<br />
1 stick Butter (soft)<br />
2 Cups 10X Sugar<br />
1-1/2 tsp Cinnamon<br />
1 tsp Vanilla<br />
-Combine Cream Cheese and butter; Add sugar and cinnamon slowly; Finish with vanilla extract.<br />

<b>Caramel Apple</b><br />
2 sticks Butter (soft)<br />
1 cup Sugar<br />
2 cups Flour<br />
1 tsp Baking Powder<br />
1 tsp Cinnamon <br />
4 Eggs<br />

2 Granny Smith Apples; Diced <br />
-Combine butter and sugar; Add eggs one at a time, then vanilla. Combine dry ingredients and add to the wet mixture. Fold in apples. 20 minutes.<br />

-Combine butter, peanut butter, brown sugar until smooth. Add eggs one at a time. Add dry ingredients; Then add milk with vanilla. Once scooped into muffin tin, take a mini peanut butter cup and push it in the center down until it's leave with the top of the batter. 20 minutes.<br />

2 tsp Vanilla<br />
3 cups 10X Sugar<br />
3/4 cups Cocoa Powder<br />

First off, I have a beautiful baby nephew just about two weeks old. I'm so glad that, that wait is finally over &he is here!!<br />

And now onto my technology issues. My camera is completely dunzo; It was working okay then one little slip and it freaks out &now the lens won't go back in when being turned off or focus when being turned on. I've been wanting to get a new camera, but with the move it's kind of been put on the back burner. Hopefully within the next week I will have a new camera, not the one I want but something that will still do the job. (The day I get a fancy camera that I've been wanting since I was how old, will be the day I will bake everything &take pictures of anything! So maybe it's a good thing that day won't come any time soon. =] )<br />
&My other issue, of all things my computer! Right before I moved I started having trouble with my charger cord, it either wouldn't charge or turn on unless I would fidget with it foreverrrr. &It finally took it's last blinking breath &died.. But there is a new cord on the way, that should be here early next week.<br />

Even though I don't have a camera or a computer this week I am still baking. This weekend is my twin neices' birthday &I am doing their cake like every year. This year they're going with a Hawaiian theme, so I'm going to have loads of fun with the decoration on the cake. Eventually I will have a photo on the slideshow, so it won't be unseen. =]<br />

Preheat oven 350 degrees. In large bowl; mix flour, baking soda, and salt &set aside. Using a mixer, mix butter and both sugars until light and fluffy. Add eggs and vanilla and mix until combined. Add flour in two additions, scraping doin the sides in between. Mix until combined. Mix chips together in large bowl and stir into the cookie batter. Cover a large baking sheet with parchment paper &using a cookie scoop place the cookies on the sheet. You should get about 3 dozen cookies. Bake for ten minutes, for soft cookies &12+ for a little bit harder of a cookie.<br />

My family loooved these cookies, they will definitely become a staple cookie recipe that I keep around for holidays and just because. They stayed soft up to two days after I originally baked them.. (That being tested from the three cookies that I had left. Hehe.) &You can definitely mix and match the chips that you use, or even different nuts. While working at the restaurant I made Cheesecake brownies daily, they were one of my best sellers &I have missed those delicious treats since I left there. Recently, they have been on my mind and, of course, I'm thinking how can I give a little twist. What else would pop up but <b>peanut butter</b>!? So, here goes my Peanut Butter Cheesecake Brownies.. <u>Peanut Butter Cheesecake filling</u>: (I will need to scale this down, it was a bit much)<br />
1 lb Cream Cheese<br />
3/4 cup Sugar<br />
2 Eggs<br />
1/2 cup Peanut Butter<br />
1 1/2 tsp Flour<br />
1 tsp Vanilla Extract<br />
<br />
Combine cream cheese and peanut butter until smooth. Gradually add sugar and flour. Add eggs, one at a time and mix for 2 - 3 minutes, or until smooth and combined. Mix in vanilla.<br />

<u>Chocolate Chip Banana Bread</u>:<br />
<br />
1 1/4 cups flour<br />
1 teaspoon baking soda<br />
1/2 teaspoon fine salt<br />
2 large eggs, at room temperature<br />
1/2 teaspoon vanilla extract<a class="crosslink" href="http://www.foodterms.com/encyclopedia/extracts/index.html"><br />

1/2 cup unsalted butter, at room temperature<br />
1 cup sugar<br />
3 ripe bananas, peeled, and mashed with a fork (about 1 cup)<br />
3/4 cups chocolate chips (you can do less, I like extra =D) <br />

Preheat oven to 350 degrees. <br />
In a standing mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the butter and sugar until light and fluffy. Gradually add the eggs and vanilla into the butter while mixing until incorporated. Add the bananas (the mixture may appear to be curdled, so don't worry), and remove the bowl from the mixer. <br />

With a spatula, mix in the flour mixture until just incorporated. Fold in the chocolate chips (walnuts could easily replace the chocolate chips).<br />
Bake for 55 minutes or until a toothpick inserted comes out clean.<br />

For a finishing touch once the bread had cooled a little I dusted them with some 10X sugar.<br />
